Excerpt from Wikipedia:

"...SEO considers how search engines work, what people search for, the actual search terms or keywords typed into search engines and which search engines are preferred..."

Many people believe that Search Engine Optimization (SEO) is more than what it is. This isn't to say the practice of optimizing one's website for search engines isn't important, in fact it is extremely important. In simplest terms it is simply executing a well organized plan. One of the good things about SEO, however, is that it doesn't necessarily need to be done ahead of time like architects that draw blueprints, or writers that make an outline. Web designers / builders can optimize existing websites the same as websites that are being built from the start.

Some important things that search engines take into consideration are out of your control, like how many links point to your website. Most people, fortunately, do have control over some other criteria that search engines look for. Making sure a site is updated on a regular basis, for example, provides new content for users and lets search engines know the website is being maintained. While there are other factors website owners have in optimizing their website(s), some of the most important are to make sure that all content is clear, concise, properly coded and generated for actual people. If that is done then those users will be able to find what they are looking for, your website.

Just as important as what to do, is what not to do when it comes to SEO. The biggest thing to stay away from is anyone that promises results, there are just too many factors that are out of ones control.
This would be like going to a mechanic that guarantees your car will last for 1 million miles as another vehicle crashes into your car and totals it.
